Most of what people picture when they think of northern Thailand sits one to three hours outside Chiang Mai: the country's highest peak, the White Temple, sticky waterfalls and hill villages. All of it is doable in a day, but the driving is the part that decides your day.

Count the driving, not just the sights
Chiang Rai is roughly three hours each way, so a White Temple day is a long one. Doi Inthanon is closer but the park itself is spread out. A five or six hour trip usually means somewhere within about an hour of the city.
Join tour or private
Join tours are cheaper and leave on a fixed schedule with other travellers. Private tours cost more but set their own pace, which is worth it with small children, limited mobility, or if you want time to photograph rather than keep up.
One headline sight, or several
Some trips build a day around a single place; others chain three or four. Chaining sees more but leaves twenty minutes at each stop. Decide which you want before comparing on price.
Season changes what you see
Waterfalls are at their fullest just after the rains, roughly September to November. Doi Inthanon is genuinely cold at the summit year round, so bring a layer even in April.

About three hours each way by road, so a White Temple day trip is a twelve-hour commitment door to door. Most tours leave between six and seven in the morning. If that sounds heavy, Doi Inthanon or the waterfalls north of the city deliver more sightseeing per hour of driving.
Is Doi Inthanon worth a full day?
Doi Inthanon is Thailand's highest point at 2,565 metres, and the park is spread out: the summit, the two royal pagodas, a cloud forest boardwalk, waterfalls and Karen villages. Seeing more than two of those needs a full day. It is also genuinely cold at the top all year, unlike anywhere else near Chiang Mai.
