About this activity
We start as the sun goes down over Chiang Mai and we ride a red songthaew, the open pickup truck that works as this city's bus and taxi, from one neighbourhood stop to the next. Eighteen tastings, all of them Northern Thai, most of them things you have never eaten before and half of them things you cannot name yet. Bamboo worms by the bag, beef laab dry fried with a dozen roasted spices, chilli dips scooped with pork crackling, coconut sticky rice steamed inside a tube of bamboo. You join a small group of fellow eaters, never more than ten, and you eat on plastic stools at streetside tables. There is pork, beef and fish in nearly everything, so this one is not for vegetarians. Come hungry, this replaces dinner. HANDS, NOT FORKS Northern Thai food is eaten with the fingers, and by the second stop you will have stopped looking for a fork. SHARE LIKE A THAI FAMILY Nothing is served as your own plate. Everything lands in the middle, and you reach in with a ball of sticky rice like everyone else at the table.

Sold by the bag and eaten like crisps: salty, nutty, gone in a handful. Half your group will refuse. The other half will finish the bag. Nobody has to try it.

Sticky rice with coconut and black beans, steamed inside a bamboo tube and peeled open like a cigar.
